Estate Background

Finca El Vergel is run by brothers Elías and Shady Bayter in Colombia's Tolima region at 1,600–1,900 m elevation. The farm is renowned for its continuous post-processing innovation and has been selected multiple times as a featured lot by international buyers including Genuine Origin and Onyx Coffee Lab (Source: Genuine Origin buyer notes, 2021–2024).

Pink Bourbon is one of Colombia's most exciting varieties in recent years. According to FNC (Federación Nacional de Cafeteros de Colombia) variety research, its exact genetic background is still under study, but it expresses the rich sweetness of Red Bourbon combined with the bright acidity of Yellow Bourbon.

Flavor Description

Natural processing gives this Pink Bourbon a rich, fruit-forward fermented sweetness. The dry aroma immediately offers fresh strawberry and raspberry notes. On the palate, rose tea florals unfold elegantly, followed by jam-like red-berry sweetness. The body is round and full, with a gentle cocoa sweetness in the finish.

Market Presence

Brewing Notes

  • Pour-over: Medium grind, water temperature 90–92°C, ratio 1:15
  • Tip: After grinding, wait 30 seconds before smelling the dry grounds — the strawberry and rose layers are remarkably expressive
