Organic washed coffee from smallholder cooperatives in the highlands of southern Tolima — bright red fruit and citrus over a caramel finish, often organic and Fairtrade certified.
Planadas sits in southern Tolima at high altitude with large day-night temperature swings. This organic washed coffee is brighter than a typical Supremo: red plum and orange up front, brown sugar and caramel through the middle, and a milk-chocolate finish, with lively but never sharp acidity.
Buying Tips
Certifications: Most local cooperatives hold organic and Fairtrade certification
Social background: The area was affected by the armed conflict, and coffee cooperatives have been central to rebuilding; women-producer lots are also common
Brewing Notes
Pour-over: Medium-fine grind, 91–92°C, ratio 1:15
Iced: The red-fruit sweet-tartness stays clear when chilled
