Medium Light
Medium light roast retains light roast's brightness while beginning to develop caramel sweetness — a highly popular level in specialty coffee.
What is Medium Light Roast?
Medium light roast falls between the middle and end of the First Crack. Beans are light to cinnamon brown with no surface oil. At this level the roaster preserves origin flavors while allowing the Maillard reaction to develop extra sweetness and complexity — making it one of the most common roast levels in specialty cafés today.
Roasting Characteristics
- Temperature range: 205°C – 215°C
- First Crack: in progress to complete
- Second Crack: not yet started
- Bean surface: dry, no oil
Why Development Time Matters
The stretch between the start of First Crack and the drop is called development time. For medium light roasts it is usually short — a common reference point is around 20% of total roast time. Under-development brings grassy, cereal-like or sharp acidity; over-development starts to erase florals and fruit. Medium light roasting is a balancing act between preserving origin character and building sweetness. Notably, the SCA cupping protocol calls for sample roasts in the light to medium-light range, because it is the most objective window for judging the green coffee itself.
Flavor Profile
- Bright yet rounded acidity: softer than light roast but still vivid
- Caramel and honey sweetness: sweetness from developing Maillard reactions
- Floral and fruity notes: origin character is still present
- Light to medium body: texture begins to fill out
Best-Suited Coffees
- Washed Ethiopia: florals and citrus are at their most balanced
- Kenya: berries and bright acidity remain vivid, with added sweetness
- Colombia and Central America: red fruit plus caramel sweetness
Brewing Tips
Medium light roasts are ideal for pour-over, AeroPress and siphon. Use 91–94°C water, a 1:15–1:16 ratio and a grind slightly coarser than for light roasts. Rest the beans for about 7–14 days after roasting so CO2 can escape and flavors settle. For espresso, extend the shot or raise the dose a little to balance the bright acidity.
