Brown sugar and berries on the dry aroma; bright redcurrant, raspberry, and orange acidity on entry; caramel and honey sweetness through the middle with light cinnamon spice; a medium, juicy body; and a finish of black tea and milk chocolate.
Buying Tips
Region: South Kivu lies on the western shore of Lake Kivu, just across the water from Rwanda's Kivu region, with a similar terroir
Cooperatives: Long affected by conflict, the area relies on coffee cooperatives to rebuild communities and incomes, and many lots are Fairtrade certified
Potato taste: As in Rwanda and Burundi, an occasional bean may carry a raw-potato aroma, a Great Lakes regional defect; grinding fresh limits its impact
Brewing Notes
Pour-over: Medium-fine grind, 92°C, ratio 1:15
Iced: The berry and citrus sweet-tartness is even more refreshing when chilled
