Flavor Description

Because San Marcos is warmer and flowers earlier than many other Guatemalan regions, natural lots there often show ripe red berries, plum, cocoa, and dark sugar sweetness. This Bourbon natural is not as fermentation-heavy as an Ethiopian natural. Instead, it keeps the structure and clean base Guatemala already does so well.

Style Positioning

This coffee helps round out processing diversity in Guatemala’s profile. It shows that Guatemala is not limited to washed chocolate-driven cups; it can also produce naturals with obvious ripe fruit while retaining Central American order and clarity.

Brewing Notes

  • Pour-over: 90–91°C water, ratio 1:15.5
  • Tip: Avoid stretching the brew too long so the berry sweetness stays lively and does not get covered by the later cocoa bittersweetness
