Buying Tips

  • Kona grades: By size and defects — Extra Fancy, Fancy, No. 1, Select, Prime, and others; Fancy is just below Extra Fancy, with little difference in flavor
  • 100% Kona vs. Kona Blend: Under Hawaiian law, a "Kona Blend" need contain only 10% Kona coffee — check for "100% Kona" on the label
  • Region: Kona lies on the volcanic slopes of the Big Island's west side, with afternoon cloud cover and well-drained volcanic soil

Brewing Notes

  • Pour-over: Medium grind, 90°C, ratio 1:15
  • Technique: Kona is delicate; avoid very hot water to preserve its nut and caramel sweetness
