Flavor Description
Kalosi is often treated as both a trading name and a flavor identity for South Sulawesi highland coffee. This wet-hulled lot shows fresh florals, cinnamon, dark cocoa, and a mellow woody layer. Acidity is low, body is solid without being rough, and the cup feels more balanced than a typical Mandheling while deeper than a washed Toraja.
Style Positioning
If Mandheling represents Sumatra’s intensity, Kalosi sits closer to Sulawesi’s middle ground: it keeps Indonesian body and spice, but with tidier structure and a softer finish. It is an important branch of Sulawesi coffee worth including in the origin set.
Brewing Notes
- Pour-over: Medium grind, water temperature 90°C, ratio 1:15
- Tip: Use regular pulse pours to keep floral and cocoa notes balanced without overemphasizing woodiness
