Flavor Description
Blawan is one of Java's oldest estates. This bean presents a traditional Java style: low acidity, mild, with faint tobacco and spice aromas. But because it's fully washed, the flavor is cleaner and more stable than Mandheling, with a cane-sugar-like clean sweetness in the finish.
Brewing Notes
- Pour-over: Medium-fine grind, water temperature 91°C, ratio 1:15. Steady water flow draws out more sweetness.
- Siphon: Siphon brewing increases aroma volatilization, making the classic old-estate character more expressive.
