Flavor Description
Unlike Sumatra's ruggedness, this Toraja washed bean shows an elegant side. Ripe red date and plum-like gentle fruit acidity is followed by longan-dried sweetness, while the finish retains the herbal character unique to Indonesian beans — as smooth as velvet.
Brewing Notes
- Pour-over: Medium grind, water temperature 90°C, ratio 1:15. Slightly circular pouring at the start, with gentle lifting at the end to increase flavor contrast.
- Palate tip: The red-date sweetness becomes more prominent as the cup cools — a very mellow coffee.
