Milk chocolate and roasted hazelnut up front, brown sugar and caramel through the middle, low acidity, a round and firm body, and a clean finish. Compared with a standard Cerrado natural, the sweetness is more concentrated.
Buying Tips
Peaberry: When only one seed develops inside the cherry it grows into a single round bean — called "Moca" in Brazil. Peaberries make up about 5–10% of a harvest and must be sorted separately
Roasting: Their uniform shape roasts evenly, usually giving fuller sweetness and body
Brewing Notes
Pour-over: Medium grind, 89–90°C, ratio 1:15
French press: Medium-coarse grind, 4-minute steep for a fuller body
