Flavor Description

Atitlán is one of Guatemala’s most layered volcanic lake regions. This washed Bourbon carries orange blossom, cocoa, sweet orange, and a little dark sugar. The cup opens gently, builds solid sweetness in the middle, and closes with subtle mineral and spice details often associated with volcanic soil.

Why It Matters

It is less classically structured than Antigua and less acidity-driven than Huehuetenango, sitting in a sweet spot between florals, chocolate, and citrus sweetness. That makes it a strong example of Guatemalan diversity.

Brewing Notes

  • Pour-over: 90–91°C water, ratio 1:15.5
  • Tip: Use a steady pouring rhythm to expand both the floral top notes and cocoa sweetness together
