Flavor Description

Fraijanes is often considered one of Guatemala’s most direct volcanic expressions. This washed Catuai shows citrus, toffee, roasted almond, and a faint smoky spice note. The cup is clean, tightly structured, and clearly balanced between acidity and sweetness, closing with mineral and cocoa detail.

Cup Positioning

It is brighter than Antigua and carries a little more volcanic smokiness than Acatenango. For drinkers who like classic washed Central America but want more terrain-driven character, Fraijanes is an excellent addition.

Brewing Notes

  • Pour-over: 91–92°C water, ratio 1:15
  • Tip: A slightly denser early pour helps the citrus and caramel structure open faster
