Organic washed coffee from smallholder cooperatives in the Huehuetenango highlands — red apple, orange, and caramel with a milk-chocolate finish and a clean sweet-tart balance.
Caramel and toasted almond on the dry aroma; red apple and orange-like brightness on entry; brown sugar and raisin sweetness through the middle; a medium, clean body; and a finish of milk chocolate with a light floral note.
Buying Tips
Region: Huehuetenango lies in northwestern Guatemala, where warm air from the Mexican lowlands protects the highlands from frost, allowing coffee to grow at 1,500–2,000 meters
Organic certification: Growers are largely Maya smallholders who process through cooperatives; organic and Fairtrade certifications are common
Drying: In these remote mountains many farmers wash their own coffee before drying it on patios or raised beds
Brewing Notes
Pour-over: Medium-fine grind, 91–92°C, ratio 1:15
Iced: The red-apple and citrus sweet-tartness stays clear when chilled
