Hualien Ruisui's organic coffee gardens sit in the rift valley between the Coastal Range and Central Mountain Range — a uniquely favorable environment nurturing clean, sweet flavors. The entry brings cane-sugar-like pure sweetness; orange and grapefruit citrus acidity is refreshing; the finish carries almond-like nutty sweetness — overall like a refined fruit tea.

Hualien farmers mostly cultivate with organic or natural farming methods, without chemical pesticides or fertilizers. The warm, moist currents brought by the Pacific Kuroshio current give the beans a distinctive "Eastern terroir."
