Buying Tips

  • Pluma: Refers to the Pluma Hidalgo area in southern Oaxaca, one of the first places in Mexico to grow coffee; "Pluma" became the traditional name for its coffee
  • Variety: Many old Typica trees remain here, giving a soft mouthfeel and high clarity
  • Terroir: The mountains face the Pacific, with frequent mist and a mild climate; smallholders grow under shade

Brewing Notes

  • Pour-over: Medium-fine grind, 91°C, ratio 1:15–1:16
  • Technique: Typica is delicate; pour steadily and avoid heavy agitation
