Flavor Description

Pacamara is highly recognizable: florals and a light herbal note on the dry aroma, mango- and passion-fruit-like tropical fruit with orange acidity on entry, honey and brown sugar through the middle, a full, round body, and a dark-chocolate finish.

Buying Tips

  • Variety: Pacamara is a Salvadoran-bred hybrid of Pacas and Maragogype, with especially large beans
  • Flavor signature: An herbal or "green pepper"-like note is common, especially at lighter roasts — it is part of the variety's personality
  • Roast: Light roasts lean fruity and floral; light-medium roasts bring sweetness and chocolate forward

Brewing Notes

  • Pour-over: Medium grind, 92°C, ratio 1:15
  • Technique: Large beans grind into a wider particle spread, so pour a little more slowly for even extraction
