Flavor Description

The Catimor variety grown by Paiwan indigenous communities in Taitung Taimali, after natural processing, showcases a tropical character unique to eastern Taiwan. Sugar-apple and mango rich sweetness leads, followed by cocoa and dark-sugar warm base notes, with a faint tobacco aroma in the finish — thick and full mouthfeel.

Region Highlight

Taitung's Taimali and Jinfeng townships sit on the eastern side of the Central Mountain Range facing the Pacific Ocean. The convergence of sea breeze and mountain climate creates a unique microclimate. Indigenous farmers weave traditional mountain wisdom into coffee cultivation, creating strongly regional flavors.

Brewing Notes

  • Pour-over: Medium grind, water temperature 90°C, ratio 1:15
  • Also good as: Iced pour-over, which highlights the tropical fruit sweetness
