Maragogype is light and delicate: faint white florals and honey on the dry aroma, crisp citrus and green-apple acidity on entry, honey and caramel sweetness through the middle, a soft, tea-like body, and a clean finish with a light cocoa note.
Buying Tips
Maragogype: A natural Typica mutation discovered in the late 19th century in Maragogipe, Brazil; the beans can reach roughly twice normal size
Flavor: Bigger beans don't mean bigger flavor — Maragogype is usually prized for its softness, clarity, and light body
Region: Jinotega is Nicaragua's largest producing region, with cool, misty mountains well suited to lower-yielding heirloom varieties like Maragogype
Brewing Notes
Pour-over: Medium grind, 91–92°C, ratio 1:15
Technique: Large beans grind into a wider particle spread, so pour a little more slowly for even extraction
