Dried fruit and cocoa on the dry aroma; rich raisin, prune, and red-wine fruit on entry; warm cinnamon and cardamom spice through the middle; a heavy body; and a deep finish of dark chocolate and tobacco.
Buying Tips
Sanani: A blend of harvests from many villages in the mountains around Sana'a — one of Yemen's most traditional trade names, alongside Mattari and Haraazi
Mocha: Named after the ancient Yemeni export port of Mocha, the word came to stand for Yemeni and Ethiopian naturals — and gave us the term "mocha" for coffee
Processing: Yemeni coffee is grown on terraces and sun-dried on rooftops; beans are irregular and rustic in appearance, part of what gives the cup its wild character
Brewing Notes
French press: Medium-coarse grind, 93°C, 4-minute steep
Turkish coffee: Extra-fine grind boiled with cardamom, the traditional way across the Arabian Peninsula
