Heirloom

Heirloom is a collective term for Ethiopia's thousands of unclassified wild coffee varieties, housing the world's richest flavor gene pool.

What is Heirloom?

In Ethiopian coffee, "Heirloom" refers to the thousands of unclassified Arabica varieties growing naturally in local forests and semi-forests. Because Ethiopia is the native origin of Arabica, its genetic diversity vastly surpasses any other producing region.

Why Not Further Classified?

  • Sheer volume: an estimated 6,000–10,000 distinct genetic lineages
  • Classification difficulty: many varieties look similar and require genetic analysis to distinguish
  • Farmer practice: smallholders typically grow multiple varieties mixed in the same plot
  • Recent progress: JARC (Jimma Agricultural Research Center) has begun systematic identification and naming, such as the 74110 and 74112 numbered varieties

Flavor Profile

Heirloom flavors are highly diverse, but common characteristics include:
  • Florals: jasmine, orange blossom, and other fresh floral notes
  • Fruit: ranging from citrus to tropical fruit
  • Tea-like quality: light, transparent mouthfeel
  • Complexity: rich, unique layered flavor

Classic Origins

  • Yirgacheffe: famous for florals and citrus
  • Guji: berry and tropical fruit
  • Sidamo: balanced with chocolate sweetness
  • Harrar: natural process, intense blueberry and winey character
